Cooked beetroot slaw

Ingredients:

• 4 vac packed beets, you can also cook fresh beets and cool them down

• 1 apple

• 2 table spoons of olive oil

• 2 table spoons of lemon juice

• Salt and pepper to season

Instructions:

1. With a hand grater, grate the beets and apple (coarse blades)

2. Add the remaining ingredients, stir and serve
